"Little Potato" Song Lyrics

One of our favorite songs, first heard on WUNC (local NPR station), played by Metamora.

    This potato song makes me think of a delicious sweet potato souffle, first premiered at Tova's spring potluck. Read below for recipe:

    3 large sweet potatoes
    2 tbsp buter
    2 eggs, (yolks and whites separated)
    3/4 -1 c grated cheese (i like a mix of mozarella, cheddar, and monterrey jack)
    1/2-1 tsp cayenne pepper
    salt and pepper to taste

    Boil sweet potatoes with skins until soft, about 40 min. Remove skins and add butter, cheese, egg YOLKS, cayenne pepper, and salt. Mix until cheese is melted. In a separate bowl, beat egg whites until stiff. Then, add egg whites to sweet potato mixture and mix gently. In a greased casserole dish, bake sweet potato souffle for 30-35 min at 375F. Enjoy!
